Aunty Dale to share Aboriginal culture and flavours on MBFW stage
As a proud Indigenous woman, Aunty Dale Chapman loves sharing Australia’s unique flavours and ingredients with other foodies.
The award-winning chef, cookbook author, public speaker, television personality, lecturer, and Founder of My Dilly Bag will be showcasing her deep cultural pride and love for food when she takes to The Kitchenette Stage at this year’s Moreton Bay Food + Wine Festival.
“I am thrilled to be returning to the Moreton Bay Food + Wine Festival because it is such a great event that brings people together and highlights all of the many farmers and producers who call this region home,” Aunty Dale says.
“This festival is one of my favourite events to attend each year.
“Not only will I be up on stage cooking this year, but My Dilly Bag will also have our own stall in the Marketplace where you can stock up on items from our bush pantry.”
Appearing on all three days for the festival - which will be held at Woody Point’s Apex Park from August 23-25 - Aunty Dale says she plans to make her own adaptation of a traditional Italian dessert.
“As a chef and an Indigenous person who has been eating this stuff for a while, I like to create different dishes that everyone can relate to, so this year I am doing a wattle seed raspberry tiramisu,” Aunty Dale says.
“It has rich chocolate and coffee notes and is the ideal cake to satisfy sweet tooths.
“Wattle seed is one of the products you will be able to pick up from our stall, as well as on our website.
“My Dilly Bag also stocks a wide range of native herbs and spices, jams, relishes, pasta, flavoured botanical popcorn, loose teas, delicious syrups that you can pour over ice cream or pancakes, as well as infused oils.
“These are all made with natural ingredients that Aboriginal people have been utilising for thousands of years.
“A lot of people want to look at what types of ingredients have sustained Aboriginal people, and if they can utilise them in their daily lives, we will be a healthier nation.”

- Saturday: 1.15pm-1.45pm

She has worked in the hospitality industry as a professional chef for more than three decades, with her love of cooking stemming from her younger days when she would cook around the campfire with her parents.

Held over three big days from August 23-25, the Moreton Bay Food + Wine Festival is Queensland’s biggest foodie celebration with special appearances by a host of celebrity chefs, live cooking demonstrations, unique dining experiences, pop-up bars and restaurants, food trucks, local produce, market stalls, music, hands-on workshops and more.
Every adult and concession 18+ ticketholder will also receive a free Festival Cup to utilise with the vendors during the festival.
